Fresh and delicious shrimp.

Do these shrimp look good to you?  They were just as delicious as you might think or so says my better-half.  She’s a shrimp junkie going back many years and considers herself an expert.  I tried just one and really couldn’t disagree.

Summer time meals are something special around here and are to be enjoyed and relished whenever possible.  While I’m not a big fan of shrimp or lobster I do love just about everything else that the ocean has too offer.  I experiment when possible to come up with new flavors and textures with my seafood.  This week we picked up those shrimp and a large haddock fillet just for me.

To make things a little more interesting I poached the fillet in habanero wine.  I made this wine a few years back and it carries with it a delicious flavor and heat. Once the poaching was completed the fillets were dropped onto the grill to give them a little crispiness.

Just sooooo good.

Then it’s off to the table with a side of fresh corn-on-the-cob and a glass of Chardonnay.  Cherry tomatoes picked just before the meal and chilled are a perfect addition.  That beer in the picture belongs to my better-half.  She considers any beer she drinks as her Chardonnay.

The garden continues to flourish now that we’ve had a few days of rain to help perk things up.  I picked this collection of hot peppers (Serrano, Fresno, jalapeno, and Anaheim’s) today because tomorrow is salsa day and I want them as fresh and hot as I can get.

I’ll be slicing and dicing all of the other salsa ingredients this evening in preparation for tomorrow.  This is the best part of Summer for me without a doubt.

08-08-2016 Journal – August in Maine!   Leave a comment

I have to say that the last week of weather has been as good as it can get for Maine in August.  Temperatures during the day have been in the mid-80’s and dropping into the mid-50’s at night. Just perfect.  Since it’s been so nice we decided to take our visitors for a day trip to Portland.  A hot and sunny Sunday in August means lots of tourist and thousands of people to watch.  Finding parking is usually a problem but we got lucky, parked the car, and headed down Commercial Street into the Old Port.

Commercial Street runs right along the length of the harbor and always has some nice shots available of the boats.

The ladies were in and out of a dozen shops and buying, buying, and buying. I spent most of that time people watching and taking a few pictures for future use.

We returned home tired and hungry and began the preparation of our dinner. Shish-kabobs, salads, pies, cakes, and a growler full of Goat Island Light beer. Since it was my birthday my better-half bought me the only beer I like. and it was wonderful.  After dinner we made our way to the beach located in Scarborough, Maine. A cool breeze was blowing and the water was perfect for wading and relaxing.

The clouds just kept getting darker and darker but it never rained.

It didn’t take long to tire us all out and we returned home to relax for the rest of the night.  Another great day and an even better birthday.

 

 

 

04-04-2016 Journal – Spring & Weight Loss (Ugh!)   Leave a comment

I was happy yesterday when the last of that surprise April snow storm melted away.  Spring Fever immediately returned and thoughts of gardening and yard work filled my stupid head.  I rushed to Lowes after making a list of supplies including a new grill, a grill cover, and eighty 50 lb. bags of assorted potting soils and dirt.  I was in heaven for the remainder of the day even though none of the stuff wouldn’t be delivered until next week but I didn’t care. I slept well dreaming about warm weather and many other Springtime activities. When I awoke this morning it was snowing again.  I’m such an idiot.

As I was watching the snow flakes fly buy the window I remembered something else that was scheduled for today that I wasn’t looking forward to either.  My better-half and I decided a few weeks ago that it was time to get rid of all of the extra holiday and winter weight we’d accumulated. Today was the start of our new and improved weight loss program (sarcasm). If that doesn’t depress the crap out of you nothing will.

We did our weight-in’s separately because neither one of us wanted to announce the results to the other.  It’s just too effing depressing. This next month is going to be more than a little difficult but absolutely necessary. We both want to be healthier and thinner but the road to those things is a bumpy one.  Eat more salads, less carbs, less calories, no snacking, no candy, no dairy, no alcohol, and OMFG just shoot me now.  I’ll keep you posted on our progress regardless of the results. 

I took a walk around the property a few days ago and it always amazes me just how resilient the plants are. We have things sprouting everywhere regardless of the snow and colder temperatures.  Here are a feel quick snaps.

THE FUN SPRING IS JUST BEGINNING

10-31-2015 Journal – Bye, Bye October!   Leave a comment

Say goodbye to October everyone. This last month has just flown by and once again ended with no Halloween trick or treaters at our house.  Depending on how you look at it, it could be both a good thing and a bad thing.  Being in a rural area with very few toddlers around, we’re usually safe from pranksters and vandals and that’s a good thing.  The bad thing is for my better-half who prays for costumed kids to show up in great numbers.  These days she’s forced to pour all of her Halloween craziness on her grandchildren and she does . . . in spades.

Our out-of-town visitors arrived yesterday afternoon, intact and tired after an eight hour drive through NJ, NY, CT, MA, NH, and finally Maine.  With this recent burst of warm weather we decided to do a little grilling on the deck.  It’s likely to be the final time we’ll be using the grill this year and next week it will be winterized and stored away.  Here’s a quick shot of the kabobs just before hitting the grill. They were yummy.

If that does make your mouth water just a little you may have a serious problem.  The food was excellent and gave everyone a chance to sit back and relax and catch up a little.

I’m up early this morning and enjoying a cup of strong and hot coffee.  I fed the cat and he apparently enjoyed his breakfast because he just strutted into the man-cave looking for a comfortable place to plop.  After all he desperately needs that 18 hours of beauty sleep every day.  I’ll give him about ten minutes and he’ll be out cold for a few hours.  If you haven’t figured things out just yet, he’s also retired.

I hear people waking up in the house and if I know my better-half there’ll be quiche in my future within the hour.  More hot coffee, some crispy bacon and if I’m sneaky enough I might snatch one of the last two chocolate éclairs leftover from last night.  Who says life isn’t awesome some times.

Today will include a  visit to see the grandkids and possibly some shopping. I hope the weather clears a little so I can get a few good shots of the group.

With Summer slowly fading away our daily routine changes once again. The nights have been cold enough recently to require a little help from my electric blanket. I rolled over the other morning and found my cat snuggling up against me, something he almost never does unless his fur coat isn’t getting the job done.  I touched his back and it was ice cold so I threw a blanket over the little dummy and went back to sleep. Another real indicator of Winter like caterpillars with extra thick fur.

I’m forever raving about how great I think Maine is but I’ve never shown any photographs of it’s main export.  While I’m not a lobster lover my better-half is.  We had a family cook-out yesterday with all the normal grilling food, burgers, dogs, sausages, and as extra added bonus . . . lobsters. As you can see these poor fellows look pretty contented in the first photo but not so much in the second.  They are now just a memory but left my better-half, her daughter, and son-in-law with dribbles of melted butter on their chins and a smile on their faces.

Our menial tasks continued this week with the canning of more pickles, the making of more zucchini bread, and the drying of more herbs.  Over the next few days I’ll be harvesting and drying batches of tarragon, basil, parsley, and chives.  I have so many damn chives growing everywhere it’s getting ridiculous. If I dry too many I’ll just have to package them up and give them to friends and family members.

I hope to begin removing plants from the garden next week. I have a lot of work ahead but would like to get it done as soon as possible.  Once the plants are removed I can begin making a few changes to the garden. I’m expanding the rhubarb area because it’s growing so fast I can’t contain it. I’m also adding on two additional frames, one abutting each large frame, to help expand the sunflower areas. We both love having as many sunflowers as possible in the garden and the birds will be thrilled with all of the extra food.  I thought it best to do this construction now rather than in the Spring.
